Pink Piggy Opens in East Grand Rapids

Pink Piggy is now open at 2230 Wealthy St. in East Grand Rapids. The space was once occupied by Chinese takeout restaurant, Foo Yen.

The new restaurant's hours are Tuesday through Sunday, 11 a.m. to 8 p.m.

According to Grand Rapids Magazine, Pink Piggy owner Echo Shao is using her mother's recipes at the new restaurant, and some creative creations of her own.

While traditional Asian cuisine is one the menu, Shao is mixing it up with more unusual recipes as well, like scallion pancakes with Peruvian-inspired creamy cilantro dipping sauce.

Other menu items include:

  • Lumpia (Filipino style spring rolls)
  • House Special Potstickers
  • Bao Bun sandwiches
  • Bejing Noodles
  • Chicken entrees like General Tso’s and Kung Pao Chicken
  • Beef entrees
  • Pork entrees
  • Vietnamese coffee
  • Boba and other specialty drinks

What is Boba?

If you're not familiar, Boba, also called Bubble Tea, is a tea-based drink that originated in Taiwan in the early 1980s. Boba is technically the tapioca pearls within the beverage.

According to Delish,

The tapioca pearls are made from tapioca or cassava starch (so they are gluten-free) and formed into small spheres. To sweetened them, they are often simmered in sugary syrup. From there, they can be added to a base, often a milk tea (tea combined with either powdered or fresh milk and sometimes a sugary syrup), but also green or black tea, coffee, a slushie, or a smoothie to become bubble tea.
